Any kind of mood Pancakes.

I’m excited share this Recipes. Not only are they delicious, they were lifesavers on hectic days, and on some days they were satisfying an unfulfilled craving.

Everyday is different and as much as I try to control how my day will be it’s impossible and an unrealistic expectation.

But in reality I can’t complain because it makes life a little more interesting in some weird unexplainable way.

On a School Day Pancakes

One of my biggest challenges is doing homework with my boys. When I get home the first thing I see is all eyes and me. Wide open and rushing towards me and questions hitting at high speed. Not your typical welcome with a big warm loving embrace, like any mother would hope for. Does this even exist or its wishful thinking?

The first thing out of their mouths is, “I’m Hungry! I’m like really starving Mom, what are we going to eat?”


Trying to make the most out of our time, because deep down I know is going to be a long night. I have them sit in the table, start opening books as I try to manage to cook and answer questions about homework.


Math, English, and Reading Log from a 5th Grader and English from a 8th grader. I tell myself with a painful realization “I have homework tonight.”

I really hope you can feel my struggle since I’m leaving some of the minor problematic details.

On a positive note regardless of the challenges, I can always manage to make dinner look perfect and taste delicious. Not only does is make me happy to come up with something quick and easy. My boys are not aware that this are flourless pancakes. And can’t tell the difference between a regular pancake. As they enjoy every sweet, comforting bite.

I did make them extra special for them. Regular Syrup and Powder Sugar. As for me I love them simple and plain.

Did I mention we manage to finish all their homework. 😉

Craving Cheese 

Another day to make it work.

Manchego Cheese Pancakes where my morning cravings. After an intense workout my cravings were at it’s worst. Steak Quesadilla was on my mind. And I was sure I would go out of my way to stop to my favorite spot.

I decided to skip this thought which would only make me feel crappy, and end my morning with an intense crash.

This pancakes where the best choice after my hard earned workout. The feeling of excitement started as soon as I pour the first layer of cheese.  And by far one of my favorites.


Towards the end of my last bite I felt satisfied  and relieved that I didn’t give in to my Quesadilla Craving. And continued the day feeling productive.

Cheesy, thick, feeling and devilishly good. Recipe exclusive for those cheese lovers.

Simple is Always Easy to Love 

Theirs those days where the morning requires no effort. Body and mind are happy and content just to wake up to another day. No expectations from the day and everything has been taken care of.

No rushed morning, no complaining, and an easy drive to school. The day is alarmingly calm. Not sure where the hit is going to come from or if the day is going to take an unexpected turn. And the answer is “No.”

I have time to open up a magazine, and decided what I’m having as a snack. I call this recipe, Simply Tasty Low Carb Pancakes because theirs no need for a proper introduction, plate or fork. Feeling, bursting with spices, taste just like bread. Easy to make and easy to love.

As I sit an enjoy every bite and smile to myself “Why Can’t Every Day Be Just Like This.”

Instructions
Cream Cheese Low Carb Pancake
  1. For this recipe I'm using a Hand Mixer Blender, Add all your dry ingredient Almond Flour, Splenda, Cinnamon, Baking Powder, Nutmeg.
  2. Add wet ingredients, Almondmilk, Crisco Coconut Oil and remember to melt just a tiny bit, Eggs, and Cream Cheese. Blend all the ingredient until smooth. Stove should be set a low heat. Place a pan add butter pour in some batter. Cook for about three/two minutes on each side.
  3. NOTE If flipped to soon pancake will pull apart and you'll have a messy eatable pancake. 😉
Manchego Cheese Low Carb Pancake
  1. For the Manchego Pancakes, it will require a Bowl and a Hand mixer. Add Almond Flour, Nutmeg, Baking Powder, Ginger, Cinnamon, Salt and mix.
  2. Pour in your wet ingredients Almond Milk, Eggs. and Almond Extract. Mix until nice and smooth.
  3. Set your stove at low heat and warm the cooking pan. Add Spray Cooking Oil and Pour one layer of the batter. At this point your Manchego Cheese should be shredded and added on top of the pancake layer and add a second layer of batter.
  4. Batter is going to be nice and thick. Cook for about three minutes on each side. Makes two delicious Thick Cheesy Pancakes. NOTE Theirs two ways you can do this. One if by adding the second layer of batter. And the second would consist of only pouring one layer of batter adding the cheese and flip. Either way you'll have Melted Chessy Pancakes. Enjoy 😉
Simple Tasty Low Carb Pancakes
  1. For this recipe a Hand Blender or Bowl with a Hand Mixer will work. I used a Hand Blender. Pour Almond Four, Almond Milk, Eggs, Baking Powder, Nutmeg, Pumpking Pie Spice, Splenda, Almond Extract, and Cinnamon. Blend all the ingredients until nice and smooth.
  2. Set stove on low heat. On a cooking pan add Unsalted Butter, and pour Pancake Batter. Cook for 2/3 minutes on each side. NOTE Add your favorite Syrup, Fruit, or Favorite toppings. Makes about Three Simple on the Go Pancakes. Enjoy 😉
