I had broccoli for days. I knew I wouldn’t be able to eat it all by myself and decided to make Curry Broccoli Soup for the first time.

Vacation mode equals relaxed mode. Since I had a whole day to play…let me just confess not a good thing for a procrastinator like me. And instead of creating the best recipe because I wasn’t on a time clock I did the absolute opposite. Which resulted one of the best choices for this particular dish.

I get more creative on my recipes when I don’t put to much thought and stress.

Curry Broccoli Soup For Days

Literally I made about two litters of soup. And to my surprised I’m glad I did. Now I can eat a cup of soup on a lazy, relaxed, or not in the mood too cook kind of day. Not only was it a tasty, I figured out all the possibilities with this recipe.

I sautéed sausage, turkey patties and poured some of the soup as sauce with a tablespoon of Fresh Parsley…I love Parsley.  And it was the perfect meal after finishing up an interesting book that I’m currently binging on.

Can you possibly imagine what you can do with this soup…I can.

The Story behind the Curry Powder

My fascination with Indian, Mediterranean Cuisine beyond are beyond indescribable.

One of my favorite Mexican dishes is Mole which is prepared in thick sauce and even though the flavors are not similar the texture and the amount of spices that go into these dishes are probably where my addiction comes from.

Many years ago I tried this homemade Mole at a party that I fell in love with, and since then I haven’t found a similar or close enough recipe. I’ve tried different restaurants and I find them unpleasantly flavorless…Reason why I stopped ordering Chicken Mole in any restaurant.

Back to my Curry Dish…just a little insight of why I love cooking with spices. Secretly I’m trying to find the best sauces for all my dishes.

When Nothing Else Matters

It must be my fascination with food that brings comfort at the start of my mornings and ending of my day.

I usually prefer a table and silverware when eating. But on this particular day off I was sitting in my car after listening to an unpleasant conversation at a bookstore. I pulled out my spoon and bowl of soup took the first bite and forgot all the negative feelings that were stirred inside at that very moment.

With a smile I recalled the best part of the day and all the reason to be grateful.

Simple and Basic 

Looking for comfort food then look no more. Sure the list of spices is long but if you like extra spices and spicy food. Then this is the dish for you. Then again I’m literally basic with a unique sense of taste buds.  Enjoy 😉

Curry Broccoli Soup

  1. On a Pan pour Olive Oil, add Garlic, Onion, and satay for one minute until translucent. Pour Water and let it come to a quick boil.
  2. Add Broccoli, Tomato Soup, Italian Seasoning, Parsley Dried Flakes, Dry Basil Leaves, Fine Sea Salt, Ground Coriander, Curry Powder, Oregano Dried Leaves, Coarse Black Pepper, Smoke Paprika Powder, Ground Ginger, Ground Cumin, Ground Cloves, Tomato Soup, Chile Jalapeno. Cook for 20 minutes
  3. Let it cool down. On a blender Pour the Soup and be careful if still hot. Place a wet rag on top of your blender, because it will pour out if too hot and you don't want to get burn. With the amount of soup it will have to be blended three times. On a separate bowl pour all the soup. NOTES Be careful when using the blender if soup is too hot. Let Curry Broccoli Soup cool down.
