Moist Pumpking Low Carb Bread

“I ate almost the whole loaf!” my brother informed me over the phone. I smiled and had to ask the golden question “What did you think?” And he replied “when are you making another one.” The sound of his voice was music to my hears.

Minutes later I told him it was flourless, and that it wasn’t as rich in sweetness as a piece of chocolate cake. It was funny to hear him reply, “I don’t really like sweets” when I’ve seen him devour a whole cake of chocolate.

He continues to describe his experience over the phone and shocked that it was a flourless bread. Seconds later he said “when are you making another one?” I replied with “soon” as he made his request loud and clear, “tomorrow?”

Reason why I’m really excited to share this recipe because I felt just like my brother. Almost amazed of how good it was.

Low In Sugar

Let me be clear it has minimal sugar, and if you love your baked good with loads of sugar then this is not the recipe for you. But I would definitely think twice before not considering to try something new.

The first time I tried a flourless recipe was a total fail. The idea of baking with a flourless bread made me feel like I had to make a change that I wasn’t ready for.

Traditions are Hard To Break

Healthy signified that I  had to change my eating habits. The whole concept was intimidating a tiny bit coming from a person that loves sugar.

Habits are definitely hard to break.

Fixated on the latest trending dessert became my obsession for a long time. Baked goods, Bear Paws from Chocolate Factory were part of my morning meals. The weekends weren’t  any better, favorite routing was visiting Cold Stone and ordering the  “The Pie Who Loved Me” and when asked “what size?.” My eyes would get wide and with a huge smile I would reply “Gotta to have it.”

For a few minutes I was in a state of complete joy and everything felt perfect. Sitting outside on a bench at 10:00 a.m. The sun barely heating up the day was peer pleasure.

But the momentary bliss was always short lived. Unfocused, moody, tired, and overwhelmed with guilt.

The crash was the hardest to come back from.

Easy To Love Bread

Those days are over. Now let me get back to my recipe. 😉

If the first time doesn’t work, dont’ give up. It takes consistency, positive attitude, acceptance of change, and determination.

Moist Pumking Low Carb Bread
Prep Time 10 minutes

  1. On a bowl place all dry ingredients Almond Flour, Pumpkin Puree, Baking Powder, Nutmeg, Cinnamon, Sweet and Low Sugar mix
  2. Melt Coconut Oil for a couple of seconds in microwave mix into the dry ingredients, add Sour Cream, Eggs one at a time, Pumpkin Puree
  3. Spray baking dish with cooking oil. Pour the batter into dish, and bake for 50 minutes at 350 Degrees. Enjoy 🙂
