I wish I had a great interesting story behind this bund cake…other than it’s a must have and try.

Banana Babysiting

I must confess that bananas are not my favorite fruit to indulge on…but weirdly I get excited as I wait for the bananas to ripen and bake the best Banana bread 🍞…Yes I know it doesn’t make sense.

Bananas can be displayed on the dinner table and no one will be tempted to eat them unless I make them look tempting to eat…and it would include being inserted  inside a peanut butter sandwich, or Banana Split.

In other words I don’t have to worry that I wont have bananas for Banana Bread…and that makes me happy.

Ready To Bake

The wait was well worth it…and I decided to add a twist to the recipe. I wanted the bread to be extra moist. And I combined the recipe with Pineapple Juice 🍍 and  the add on was perfect.

The juice from the Pineapple gave the bread a wet soft dense  finish.

My Secret! Sour Cream

I believe that what makes my bread extra moist  is adding Sour Cream. If I’m baking there’s a high possibility that sour cream was added.

Better Than Bakery Style 

I’ve tried many types of banana breads and nothing comes close to my recipe. I have tasted dried banana bread, moist banana bread, and lazy made banana bread. Unfortunately none satisfy my taste.

This Bund Cake has a dense texture, melts in your mouth with every bite, and definitely  infused with bananas. It will fulfill every banana bread fantasy you’ve ever had.

And combined with Pineapple it only adds to the joy of experiencing the best tasting homemade Pineapple Banana Bread. Enjoy 😉

Upside-down Pineapple Crust
Instructions
  1. Pour Cane Sugar, Brown Sugar and Pineapple Juice, add Unsalted Butter mix with hand mixer. Add Eggs, Sour Cream, Salt, Baking Powder, Baking Soda, Nutmeg, Ground Cloves and Bread Flour mix well with hand mixer. Place Ripe Bananas into batter and mix with hand mixer.
  2. Cooking Spray Oil on bottom of Bund Cake Pan, add Unsalted Melted Butter, Pour Brown Sugar evenly on bottom of the pan, and add Crushed Pineapple. Note: Leave Butter out of refrigerator for a couple of hours to soften or place in microwave for couple seconds.
