Didn’t take the perfect shot, and that’s not going to stop me from sharing this delicious omelet.

I woke up feeling extremely hungry and was craving random foods.

I’m well known for having a particular taste buds.

The more flavor and spices the dish has the better it taste.


I wanted something filling and what came to mind was a giant quesadilla full of Carne Asada smothered in cheese.

Didn’t have any meat on hand I have to admit disappointed at the moment.

I decided to take an extra look at what I did have in the refrigerator, and decided to get creative.

Sincerely I can admit that certain things make me happy and if I’m sharing it’s because I strongly believe it’s good enough to fill your heart with beautiful thoughts.

This omelet not only made me happy, I was literally singing with joy as I took bite. I didn’t wanted to end.

It has a delicious sweet and crunchy flavor which is my favorite part. It didn’t have any cheese, but tasted cheesy.


And the Lime Avocado sauce was added for special twist and extra flavor.

I really hope you enjoy this recipe as much as I did. I even forgot how much I love steak and momentarily considered going partially vegan. 😉

Instructions
  1. Cut all the veggies into small pieces. On a non stick pan add butter and satay onion and garlic first for a minute. Add the rest of veggies and all the spices and cook for two minutes on medium heat. Leave out a little of the cut parsley for garnish at the end.
  2. Separate bowl add Eggs, Coconut Milk and mix.
  3. Lower the heat little less than medium and pour the eggs on top of your cooked veggies. Let it cook for about two minutes and flip. Cook for another two minutes. Note I will definitely add the Lemon Avocado Sauce. I don't like my eggs overcooked if you love that extra crunch please cook longer. If your flip doesn't come out perfect it's okay. It's still eatable. 😉
