I’m obsessed with Quinoa

I have to admit that when I started cooking with this grain my creativity was limited. I use to cook it with water, salt, and a piece of chicken on the side. It was boring and unappetizing. It took me a long time to incorporate in my cooking.
The main reasons why I gave it another chance, was on my recent trip to New York City. My friends and I arrived at 5:00 am, on (July 05, 2017). A month and year that will forever be the best time of my life.
We couldn’t check-inn to our hotel until 3:00 pm. And decided to take a walk through the famous Central Park. I have to admit that even though I was extremely tired from my flight. I fell in love with the beautiful scenery of the park. I couldn’t wait to experience New York City, when rested and full of energy.
As I walked through the park I couldn’t help but notice people running, women painting on their canvas, others walking their dogs, and riding their bikes. I just wondered what they did for a living, how they had the flexibility to do what they loved. At least I assumed that part of their morning routine was doing exactly what they loved. Regardless of feeling mentally exhausted, and physically drained, I was able to feel all the positive energy that surrounded me.
My friends and I decided to eat in a small little café located inside the park. I wasn’t craving the delicious croissants, or mouth watering sweet breads that were displayed. I needed something light and healthy to keep my energy, and help me stay alert enough for another five hours.
I ordered a Quinoa salad, and this was the beginning of my current obsession. Maybe it was the fact that I fell in love with N.Y. City, and this grain became part of my positive experience. Its what I call my happy place.
Every day I was excited to wake up and experience the food, and try every coffee shop in the city. After my mourning workouts. I would take a walk through the city, the streets where busy with people. I felt like it was a dream. Internally I felt calm and in slow motion. The opposite of what the city had to offer, everything was moving at a fast pace.
It was exactly as I have seen in the movies. Fast, busy and full of energy.
Back to my dish I could go on for ever on my experience in N.Y. City.
On a side note the (Black Beans)should not be over cooked. I’m definitely guilty of forgetting about my beans, and sometimes end up mushy. This time they were cooked to perfection in every bite there was a crunchy smooth texture. There was a delicious balance throughout the dish.
My favorite part was eating the Patty Pan Squash, in combination with the crispy parmesan, and feta cheese.
The recipe has many ingredients, but the list is longer than the actual time it takes to put everything together. You’ll love the process and probably will end up adding some of your favorites. “I know I did.”
Highly recommended to try this dish. You will fall in love, my son did and every time he loves one of my dishes I have to admit that it’s a winner on my end.
