Sunday did not consist of a fancy dinner.

And finally I felt the light within my soul.

With the boys going back to school, helping them out with homework, soccer practice, theirs no time think or breath.

Pick a Day To Just Sit

Moving at different directions through out the week is my signature calling at the moment. Impossible to sit and enjoy that freshly brewed coffee from my favorite coffee shop.

If you must compromise with yourself throughout the week and set the intention that you will create a space for yourself and take care “Me”, all your roles will feel a little litter for that moment.

Indulge into Your Cravings

Weekdays are meant for self control.

But my weekends I’ll personally give into that craving that’s been nagging all week and give into books, chocolate, breads, and sugar.

Accept And Let Go

As much as I enjoy being a mom and seeing my boys grow up. It can be overwhelmingly challenging to have a carefree personality.

This Sunday I was able to let go of my to do list…begged my son to come with me for breakfast.

And we bonded over Pancakes and Country Fried Steak. It was one of the best morning I’ve had in a long time.

If You Must Plan Dinner! Make It Simple

My son and I came home after a great breakfast and shopping for winter sweaters.


I had to set an intention to lay, relax, meditate and remind myself that I don’t always have to save the day. And in ten minutes of positive self talk I was able to let go of the rest of the day.

This dish might not look expectacular but it holds much more value, it gave me more time to sit at the table with my son enjoy a delicious chicken salad and a great conversation.


Boneless Chicken thighs were tender well seasoned and not time consuming.

Salt and Pepper don’t do it for me, and seasonings are my best friends…no need for the extra salad dressing.

Instructions
  1. Set stove to medium heat, pour olive oil.
  2. Add chicken sprinkle with Garlic Powder, One Teaspoon of Coarse Ground Black Pepper, One Teaspoon Chicken Bouillon, Smoked Paprika, Salt, and Ground Cumin. After five minutes flip the chicken and add half of the Ground Black Pepper, Basil, half of Chicken Bouillon, and Fresh Garlic on second side cook for ten minutes. Flip and finish cooking for another five minutes. Note: Enjoy with your favorite salad, White Rice or my sons favorite fried beans and flour tortilla. 😋
